In today’s video I’m sharing some simple, healthy and tasty vegan breakfast ideas! Some easy meals you can prepare the night before, so that in the mornings there’s no work to do really.

Ingredients:
#1 Lemon Poppy Seed Overnight Oats
1/2 cup + 2 Tbsp small cut oats (70g)
1 tsp poppy seeds
1 Tbsp chia seeds
1 tsp hemp powder, optional
1/2 cup plant milk (125ml)
1/2 cup vegan yogurt (120g)
zest of 1/2 lemon, organic
1 Tbsp lemon juice
sweetener to taste (I used 1 1/2 tbsp. maple syrup)
*serves 1
#2 Cherry Chocolate Muffins
3/4 cup oats, small cut (75g)
1 cup + 2 1/2 tbsp spelt flour (160g)
2 tsp baking powder
a pinch of salt
1/3 cup + 2 tbsp cacao, unsweetened (50g)
1/2 cup + 1 1/2 Tbsp raw sugar (150g)
1 cup + 3 Tbsp plant milk (125ml + 3 Tbsp)
1 Tbsp flax seeds
4 Tbsp vegan yogurt, unsweetened
1/4 cup melted vegan butter/coconut oil (60ml) + more for greasing
1/2 tsp vanilla
1 cup cherries, frozen (150g)
optional: chopped nuts, chocolate chips
*makes 12 muffins
#3 Berry & Chia Smoothie
1 cup berries, frozen (~150g)
1 medium sized orange, peeled + without pits
1 cup apple juice (cold pressed would be best) (250ml)
a splash of non dairy milk
1 1/2 tbsp chia seeds
serves 1
