I had seen the viral Baked Feta Pasta TikTok recipe a million times and thought to myself “I wish I could just toss a block of feta on some tomatoes and call it a day” SO I thought I’d try to veganize it (literally, on camera, I never tested this before cooking it). You could get some store-bought feta and do this a bit quicker (and it would look more like the OG) but I figured it would be fun to make from scratch.
Ingredients:
“feta”
300 g firm tofu
4 tbsp melted refined coconut oil
3 tbsp lemon juice
½ cup soaked cashews
1 tsp garlic powder
1 tsp onion powder
½ tsp dried dill
1 tsp salt (add more gradually to taste)
2 tbsp nutritional yeast
cherry tomatoes (at least one pint)
3 cloves garlic (at least)
olive oil, salt, pepper, red chili flakes (for the tomatoes & finished feta)
PREP:
–Preheat oven to 400ºF (200ºC)–
1. Blend “feta” ingredients
2. place tomatoes, garlic, olive oil, salt, pepper, chili flakes in high-walled baking sheet and mix.
3. Bake tomatoes and garlic for 15 min, remove baking pan, add your vegan feta (probably 1/2 – 3/4 of the mixture) drizzle a little olive oil over the feta and bake for 15-20 more minutes, or until tomatoes are bursting.
4. Mix “feta” and tomatoes together to create your sauce (crushing tomatoes to release the juices).
5. Add cooked pasta, add pasta water to taste to loosen your sauce and reach desired consistency.
6. Enjoy!
