INGREDIENTS:
4 cups of Veggie broth
2 cups rice (risotto rice)
Olive oil
¼ pound of sliced chicken
¼ pound of sliced beef
1 onion
1 garlic clove
½ red pepper
A handful of beans
Squid
Shrimp
½ cup of small scallops
4 to 6 clams
4 to 6 mussels
2 big tomatoes
Salt & Pepper
1 tsp Saffron
Lemon for serving

TOOLS:
Paella or big frying pan.
Frying pan.
Small saucepan.
Cutting Board and Knife.
Small blender.
Plate.

INSTRUCTIONS:
Cover the frying pan with some olive oil.
Chop ½ of the onion, the garlic cloves, chicken breast, beef, red pepper, the green beans and add everything to the pan.
Once cooked, place in a separate plate and keep the oil in the pan!
Cut the squid into pieces and cook with the shrimp.
Once they are cooked, place them on the same plate as the other cooked ingredients.
Add 1 cup of water to a small saucepan and boil the mussels for a couple of minutes until they open… next drain them and set them aside as well.
Blend the remaining onion with the tomatoes to form a paste.
Cover the paella with olive oil and pour the paste, … cook for a couple of minutes alone, then add all the cooked ingredients.
Add 2 cups of rice to the mix, spread it in “X” shape so it covers the entire surface of the paella.
Slowly add the veggie broth one cup at a time. Make sure it covers the rice.
Dilute the Saffron with a bit of water and add it to the mix.
Stir the rice slowly so it doesn’t stick to the bottom.
Let it boil for 30 minutes or until the rice is cooked… turn the heat off and let it cool for 5 minutes.
Enjoy you paella with a hint of fresh lemon!

TIPS:
Add fresh lemon to enhance the taste even more.
