I hated mushrooms about three years ago and have been vegan for six years. I hated how chewy they were and the mushroom taste lingering after they were prepared. That all changed when I started cooking Lion’s Mane. Depending on the mushroom type and what I am making, I remove all the water before adding the flavor when cooking mushrooms. I use a cast iron pan and a press to help me get all the water out. You can use a pan if you dont have a press. Once the water is cooked, you can add a marinate to the mushrooms, and they will absorb the flavor. This method works perfectly if you are making carne asada-style mushroom meat. As you can see in the video, the flavor looks crazy and tastes as good as it seems. This is just something that I do, and I wanted to share it.
This is a classic recipe that I collaborated on with my good friend @bethovan about two years ago. I have updated the recipe to add even more flavor, which can be found in the Turnip Vegan Recipe Club, along with 90 + recipes I have made in the last three years, including some of the new recipes using mushrooms.
