HIGH PROTEIN BREAKFAST SANDWICH | A healthier McMuffin?

This hits all the marks! Warm, crunchy, chewy, salty, a bit sweet… you get it all with this one. It’s a super easy recipe too!

I got the idea when we stopped by a place called DC Vegetarian in Portland and got some breakfast. I knew I had to recreate it once I got home… and here it is!

RECIPE

What you need (product wise):
2 english muffins (I used whole wheat ones but you do you.)
1 package of medium tofu (soft would work too!)
1 package of smoked tempeh (If you can’t find smoked tempeh, sub for Gardein Breakfast sausage – they look like this and are dang delicious http://bit.ly/2nEZFsn)
Daiya block cheese – I used the smoked gouda flavour

RECIPE

Tofu Patty
Cut your tofu block in half. The patties should be 3/4 inch thick. This will allow them to soak up more marinade. Then cut out two circle sized pieces from your tofu block (watch video so this makes sense!).

Tofu MARINADE
mix together the following in a small bowl:
1/2 tsp turmeric
1/2 tsp garlic powder
2/3 tsp onion powder
1/4 tsp smoked paprika
1 tbsp nutritional yeast
2 tsp maple syrup
1/2 tsp salt
pinch of black pepper
3 tbsp water

once mixed, add to a shallow dish and place tofu patties on top. Make sure to flip a few times, and squish down so they soak in the flavour. Leave in the fridge overnight (that is what I did) or cook straight away (flavour might not be as good, but still there!).

To cook, pan fry patties on medium heat in a small amount of water or oil, flipping once each side. The patties are delicate!

While the patties are cooking, cut 6 strips of smoked tempeh out and pan fry along with the patties, in the same pan or a different one. Making sure they brown on each side. Turn off heat once everything is cooked on each size.

Cut slices of the cheese out and place some on each warm tofu patty, it may melt in the pan or you may need to place patty in the toaster oven like I did in the video to melt it.

If you are using the gardien breakfast sausages instead of tempeh, cook according to package instructions.

Make sure to toast your english muffins, and once everything is done, assemble your burger!

I put sliced tomato, greens, ketchup and hot sauce on mine… you can go crazy and add whatever you want. Enjoy!
