Saute the eggplant in a large frying pan over a medium heat with a little olive oil for a few minutes until it starts to turn golden brown. Add the chopped Tomatoes, tomato Paste, red beans chickpeas, dried chilli Powder, salt and pepper to taste, and mix so everything is evenly coated. Cover and simmer for 4-6 minutes until everything is completely heated through.

2๏ธโฃ 1/2 cup chickpeas and red beans boiled
3๏ธโฃ 1 cup eggplant ๐
4๏ธโฃ 1 tomato ๐
5๏ธโฃ 1 tbsp tomato paste ๐
6๏ธโฃ 1/8 tsp chili powder
7๏ธโฃ Salt and black pepper
