📖 Creamy Cheesy Vegan Broccoli Soup 📖

Ingredients (serves: 3)

Organic potatoes (500 g)
Broccoli (350 g)
Nutritional yeast (30 g):
Garlic powder (1 tsp)
Onion powder (1 tsp):
Soup cube (1):
Water (1 L)

Kitchen equipment you need:
Hand blender:

1. Finely dice the washed potatoes. Cut the broccoli florets off the stem.

2. Put all ingredients in a big pot. Add 1 liter of boiling water and cook on medium heat until the potatoes are soft. Depending on the size of your potato cubes this will take about 20-30 minutes.

3. Blend the soup, using your hand blender.

We didn’t peel the potatoes that’s why we used organic potatoes and washed them thoroughly. If you use regular potatoes, it’s healthier to peel them.

Nutritional yeast adds a “cheesy” flavour to the soup, so don’t skip it! Get it here:

In case you don’t own a good hand blender yet – the time has come!:

Looks nice.

Steph Hellmer says:

Love it! Everyone in my family is allergic to one or more foods, and I'm the only vegan, so it's hard to find something we'll all eat, but this looks perfect! Quick question- did you make this bread? It looks different from the video you posted in November.
