_Eton Mess with Berry Sauce_
½ bag frozen raspberries
½ bag frozen strawberries
1 cup sugar (split in half)
Juice of ½ lemon
1 tablespoon dark spiced rum
1.5 cups heavy cream
1 teaspoon vanilla extract
Pinch of salt
8 one inch store-bought meringues
In a small saucepan over medium heat, combine the frozen berries, ½ cup of sugar, lemon juice and cinnamon stick. Allow the sugar to melt, stirring often, and let the berries simmer for about five minutes until they are soft. Remove the cinnamon stick, stir in the rum, and refrigerate until cold.
Using an electric mixer, whip the cold cream, vanilla and salt together until stiff peaks form. In clear glasses, layer broken meringue cookies, the whipped cream, and the berry sauce. Serve immediately (or chill for up to an hour before serving).
Serves 4 – 6
