In the interest of accurate nomenclature, perhaps we should come up with a new name for these, can they really be called quesadillas if there’s no QUESO involved???
Prep time: 1 hour 30 minutes (most of it’s downtime… roasting the squash)
Serves: 6-8 (one quesadilla per customer)
TIP: Make the roasted butternut filling and nacho “cheese” ahead of time, then keep them in the fridge. That way you can easily throw together a quesadilla in a matter of minutes whenever the mood strikes you.
