Nutritarian chef Talia Fuhrman just released her first cookbook, Desserts To Live For, a collection of “heavenly desserts with zero guilt, zero sacrifices and zero risks of bodily harm . . . with only good-for-you ingredients.”

The eldest daughter of Dr. Fuhrman and his wife Lisa, Talia, learned from an early age about the connection between the foods we eat and the state of our health. Inspired by this message, she went on to earn a Bachelor’s degree in Nutritional Science at Cornell University.

Talia’s career has focused on connecting the core concepts of nutritional excellence in a way that is fresh and entertaining, filled with practical tips and the occasional touches of whimsy. In 2014, she released her first book, Love Your Body, a guide for young adults who wanted to embark on a healthy lifestyle. Now, with Desserts To Live For, she’s widening her audience and exploring the wonders of healthful treats. “Using this book as your tool,” she writes, “You can ‘eat your cake’ and stay healthy, too.”

Goji Berry Blondies

Ingredients:

11⁄2 cups rolled or old-fashioned oats or oat flour

1 cup walnuts

1 cup raw almonds, or 1 cup almond flour*

3⁄4 cup dates, chopped

1⁄2 cup non-dairy milk of choice

1 large, ripe banana

11⁄2 teaspoon cinnamon

1 teaspoon nutmeg

11⁄2 teaspoon ground vanilla

3⁄4 cup goji berries

1⁄2 cup shredded coconut

2 oz unsweetened dark chocolate

*Note: Almond flour is simply raw, whole almonds that
have been ground into a fine powder. It can be purchased
in health food stores and many supermarkets, but it is best to grind almonds and make it fresh.

Directions:

In a high-powered blender, blend the oats until a flour forms (or simply use oat flour). Add to a large bowl.

Repeat process for the walnuts and almonds, being sure not to over-process them as you don’t want the oils to release. Add to the bowl and gently break apart any clumps with your fingers. It’s okay if a few walnut or almond pieces remain.

Add dates and non-dairy milk to food processor and process until a slurry forms. Add banana, cinnamon, nutmeg and vanilla and process until well combined. Add almond flour to the date mixture in the food processor and process until completely combined. Then add in walnut flour and do the same. Finally, add oat flour to the mixture and process until fully incorporated. With a large spoon, pour the mixture into a large mixing bowl. Once in the bowl, stir in goji berries and shredded coconut evenly.

Line an 8-inch square pan with aluminum foil or parchment paper. Scoop the dough into the pan. Dip a knife in water and spread dough until smooth. Place in the freezer for 30 minutes.

Place the unsweetened chocolate in a microwave-proof bowl and heat in the microwave for 1 minute, stir, and heat for another 30 seconds or until completely melted. Remove pan from freezer. Using a small spoon, drizzle with chocolate to add a decorative touch. Cut into squares.

Store in the freezer for a guilt-free snack. They can be eaten straight from the freezer or heated in the microwave for 30 to 45 seconds.
