*RECIPE*
Chickpeas:
1 can chickpeas, drained and rinsed
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp paprika
1 tbsp olive oil
Pinch of salt
Tahini dressing:
3-4 tbsp tahini
1/2 lemon juiced
1 tbsp maple syrup
Pinch of salt
Water to thin
1/2 tsp smoked paprika
Other ingredients:
Cooked quinoa
Lettuce
Red onion
Cucumber
Avocado
1. Add the chickpea ingredients to a bowl and toss. Add the chickpeas to a lined baking tray and bake for 25 mins at 180c (alternatively air fry at 200c for 15 mins)
2. In the meantime mix together the dressing ingredients and chop your salad (use as much as you desire)
3. Add everything to a bowl and pour over the dressing. Enjoy!
