RECIPE
3 Tbsp. olive oil
1/2 white onion, finely chopped
1/4 cup white rice flour
4 cups vegetable broth
1 cup water
2 Tbsp. nutritional yeast (optional)
12 oz. (about 6 cups) fresh broccoli, cut into bite-sized pieces
1/4 cup almond milk
1/2 tsp. salt
1/4 tsp. ground black pepper
To a pot over medium heat, add oil, and onions. Stir and let cook, until the onions start to soften. Add rice flour, and stir in really well. While stirring, add broth, water, and nutritional yeast. Bring to a boil, then reduce heat and let simmer about 10 minutes, stirring often. Add broccoli. Continue to simmer, and stir often, until the broccoli softens–about 20 more minutes. Stir in almond milk, salt, and pepper, and heat through. You can blend this soup at this point if you like, but I prefer it with broccoli pieces. Makes 7 cups of soup, or about 3-4 servings.
