Cheesy broccoli fritters✨
For the Fritters:▪️3 Cups Broccoli Florets▪️2 Cloves Garlic, minced▪️1 Egg▪️1/2 Cup Shredded Mozzarella▪️2 Tbsp Grated Parmesan▪️1/2 Cup Flour▪️1/2 tsp Onion Powder▪️3/4 tsp Kosher Salt▪️1/4 tsp Pepper▪️1/3 Cup Milk▪️2 Tbsp Avocado Oil▪️
For the Lemon Parmesan Aioli:▪️3 Tbsp Mayonnaise▪️1 Tbsp Grated Parmesan▪️1/4 of a Lemon, juice▪️Salt & Pepper▪️
🌱Vegan Modification: Sub in plant based cheese for mozzarella, nutritional yeast for parmesan, unsweetened oat milk for milk, and leave out the egg
1️⃣ Bring a pot of salted water to a boil and add the broccoli; blanch the broccoli in the boiling water for 2 mins then drain and let cool while you make the aioli
2️⃣ Mix together the ingredients for the lemon parmesan aioli (add a small pinch of salt and fresh ground pepper to taste) and set aside in the fridge
3️⃣ Roughly chop the broccoli into small pieces and add it to a bowl with the rest of the ingredients for the fritters EXCEPT for the avocado oil; mix to combine
4️⃣ In a large pan preheated over medium heat, add the avocado oil; working in batches, add dollops of the broccoli batter with a cookie scoop or two spoons, flatten them slightly with a spatula, and pan fry ~2 mins per side until golden brown
5️⃣ Place the fritters on a paper towel lined plate to drain excess oil, and then serve and enjoy immediately while hot and crisp with the lemon parmesan aioli
