I see a lot of avocados in the market 🥑🥑🥑 and I’m hoping to get lucky like today – perfectly ripe, without a spot! I’m also hoping to find more ways to scoop avocados into really cool dishes.
To make this creamy, guilt free dip –
– Blend together one medium sized ripe avocado with pepper, salt, 2-3 cloves of garlic, Dijon mustard and juice of one lemon.
– Slowly add about 50 ml of olive oil in 3 parts as you blend.
Blend until you get a creamy mayo like consistency.
This keep good for a day and tastes best when eaten fresh with hot and crisp chips of your choice.
