The Best Gluten-free Cinnamon Rolls

So, I created this gluten-free recipe myself and I still cannot believe how good it came out.

Ingredient;
For the dough:
▪️2 cups all purpose gluten free flour, plus more for sprinkling
▪️1 cup tapioca starch
▪️1/2 cup rice flour (brown or white)
▪️1 1/2 teaspoons xanthan gum
▪️1 cup milk (warm; about 43 degrees)
▪️1 tablespoon instant yeast
▪️2 teaspoons baking powder
▪️1/2 cup sugar
▪️1/4 teaspoon kosher salt
▪️1 teaspoon apple cider vinegar
▪️1/2 cup unsalted butter (melted)
▪️2 large eggs at room temperature (beaten)

For the filling;
▪️1/2 cup brown sugar
▪️1 tablespoon ground cinnamon
▪️1/2 cup butter (melted)

For the glaze (optional);
▪️1 cup cream cheese
▪️2 tablespoons of soften butter
▪️1-2 cups powdered sugar
▪️Your favorite extract (I used vanilla) 1/2 teaspoon

Instructions;
▪️In the medium to large bowl, add warm milk, butter, sugar, and yeast. Mix together. Add beaten eggs, apple cider vinegar. Mix together and set this mixture aside.

▪️In another bowl, add all purpose gluten free flour, tapioca starch, rice flour, baking powder, and salt. Mix together. (Don’t forget to sieve your flour)

▪️With an electric mixer ready, gradually add flour mixture into the wet ingredients. I divided the flour mixture into three batches and added them bit by bit using an electric mixer on medium to high speed. Once you have added all the dried ingredients, continue mixing on high speed for 5 minutes. The dough will be moist but continue to mix until the dough starts to pull away from the sides of the bowl. Use a rubber spatula to remove the dough from the mixer and bring the dough gently together. Use your hands if needed.

▪️Cover the dough with a wet cloth and let it rise for 1 hour. After 1 hour, your dough should be super soft and ready.

▪️Transfer the dough to your floured counter. Knead the dough gently for 2 minutes. The dough should be soft and not sticky.

▪️Preheat your oven (180-190 degrees c)

▪️Divide the dough into two. Form the first dough into a ball looking shape. Flour your rolling pin and gently roll out the dough into a rectangle shape. The shape doesn’t have to be perfect.

▪️Using a pastry brush, spread the melted butter all around the rectangle, leaving 1-inch border clean all around. Sprinkle with the brown sugar plus cinnamon mix evenly on top of the butter and pat the brown sugar down lightly with your fingers to help it stick to the butter.

▪️Using dough cutter or a very sharp knife, cut rolls in cross-section each about 2-inches wide. Place the rolls in the prepared baking pan, about 1-inch apart. Repeat this process with the other half of the dough.

▪️Bake for 20-25 minutes. Check them after 20 minutes just to make sure they are not getting too brown. Depending on how hot your oven is. Enjoy your cinnamon rolls with cream cheese frosting.

Cream cheese frosting;
▪️While the rolls are cooling, prepare the cream cheese frosting.
▪️In a large bowl, combine the softened cream cheese and butter using a hand mixer. Blend well.
▪️Add in your favorite extract and the powdered sugar. Beat until combined.
▪️Spread the frosting over the cooled rolls.
