RAW TACOS:

1 Head of Romaine lettuce
1 Cup cherry tomatoes
1 Cup carrots
1 Cup mangos
1 Cup cucumbers
1 Cup yellow squash
1 Cup Red Bell Pepper
1-2 leaves of mint
1/3 Cup cilantro
1/3 Cup celery
1/4 Cup purple onion
1/4 Cup green onion

VEGAN TACOS:

5 Tortillas
1/2 cup quinoa
1 Cup potatoes
1 Cup carrots
1 Cup red bell pepper
1/4 Cup red onions
1 Cup cherry tomatoes
1 Cup yellow squash
1 TBSP Cumin
Salt and pepper to taste

CASHEW CREAM :

1 Cup cashews
2 Limes
Salt and pepper to taste
Oregano, basil and garlic to taste or optional
Water about 1/2 cup

AVOCADO SAUCE:

1 avocado
Salt and pepper to taste
1/2 lime
1/2 jalapeño
1/3 Cup cilantro
1/4 Cup celery
Add water if needed
