→baked buffalo cauliflower
1 medium head cauliflower, cut into florets
1/2 cup chickpea flour
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon salt
1/4-1/2 cup water or plain plant milk
1 tablespoon butter (optional)
1/3 cup buffalo sauce

preheat oven to 425°F. whisk together dry ingredients, and add water as needed to form a batter slightly thicker than pancake batter. toss florets in batter and arrange on a lined baking tray. bake for 30 minutes. remove from oven and toss in buffalo sauce and melted butter. return to tray and bake for an additional 10 minutes.

→easy cabbage slaw
1/2 cabbage, shredded or thinly-sliced
1-2 small carrots, shredded or julienned
1/4 onion, thinly sliced
1/2 cup chopped cilantro (optional)
1 teaspoon salt
juice of 1 lime
1/4 cup unsweetened plain vegan yogurt or vegan mayo
1 teaspoon chili power
1 teaspoon cumin
salt and pepper, to taste

Combine all ingredients and allow to marinate for at least 30 minutes before serving (this will allow the cabbage to soften up slightly).
