Vegetarian Paella

Paella is one of the most famous and also delicious dishes in Spain. There are many different kinds of Paellas depending on the ingredients used. In this chapter of Spanish Bites we will show you a delicious recipe of a vegetarian Paella.

Ingredients:

1 aubergine, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
2 portobello mushrooms, sliced
1 onion, thinly chopped
3 garlic cloves, thinly chopped
A pinch of salt
400 grams Bomba Rice
1,5 liters of vegetable soup.
150 grams grated tomato
0,5 grams Saffron
5-6 grams smoked paprika
1 carrot, diced

Preparation:

Chop all the vegetables as shown in the video.
Heat olive oil in the “paella” over medium-high heat.
Add the vegetables. Fry for about 5 minutes, until onion is golden.
Pour the grated tomato and let it fry for about 3 minutes. Make sure you stir gently the mix in the Paella.
Add the smoked paprika and saffron. Watch not to overcook or you will burn the saffron and leave a sour taste.
Pour the vegetable soup up to the screw level of the pan. Bring it to boil.
When boiling, add the rice. Make sure you distribute it evenly around the pan.
Reduce heat to medium-low. Cover and cook around 18-20 minutes.
Remove saucepan from heat. Let stand 5 minutes and serve.
