1 tablespoon olive oil
1/3 cup red onion
1 cup chopped frozen artichoke
1 cup vegan cheese (so delicious)
3 cups baby spinach 
1 teaspoon Italian seasoning
1/2 teaspoon sea salt
1/2 teaspoon red pepper flakes 
2 large flour tortillas
