Vegan Quesadillas with Sweet Potato Quick and Easy (Episode 2)

In the second episode of our quick and easy recipe videos we show you how to make vegan quesadillas with grated sweet potato.
We filled the quesadillas with sweet potato, mashed beans and cashew cheese sauce. For our recipe we did the tortillas ourselves so we could make sure that there are no added ingredients other than flour, salt and water. Also we prefer our tortillas with spelt flour. If you are using wheat flour you may have to change the amount of water you need.

75g spelt flour (type 630)
50 ml water
½ sweetpotato (grated)
125g kidney beans
100ml vegetable stock
½ tbs spice mix (down below)

cashew cheese sauce:
70g cashews
3 tbs nutritional yeast
5 tbs water

spice mix:
4 tsp chili powder
3 tsp salt
2 tsp smoked paprika
1 tsp cinnamon
1 tsp oregano
