Vegan Cinnamon rolls with a Mexican twist😋

Recipe + Ingredients

1 cup of Mexican chocolate powder
(I broke 1-1/2 Mexican chocolate bars, placed in a food processor and pulsed until it became a grainy powder)

*Or you can make this simple homemade version:

2 tbsp of unsweetened cacao powder
1 tsp of cinnamon powder
1/4 cup of raw cane sugar + 1 tbsp
1/8 tsp of salt *tiny pinch
Mix well.

Activating the yeast:

3/4 cup of luke warm vegan milk (I used regular soy)
1 (1/4 oz.) packet of dry active yeast
Mix well. Set aside for a few minutes. It will become foamy when activated.

Vegan “Egg”:

1 tsp of baking powder
1 tbsp of apple cider vinegar or white vinegar
1 tbsp of water
Mix well. Set aside

Vegan Glaze:

1/2 cup of vegan powdered sugar
1 tbsp of melted vegan butter
1 tbsp of plant based milk (I used regular soy)
1/8 tsp of vanilla extract
Whisk until you have a smooth glaze.

Dough:

In a large bowl add:

1/4 cup melted vegan butter
Activated yeast in milk (listed above)
1/4 cup granulated sugar
Vegan egg (listed above)
1/2 tsp of salt
3Cups of Bread Flour *Exact measurement to prevent a dense bread 🙂

Mix well.
Knead for 8 minutes by hand or in a stand mixer
*Be patient 😉 it takes a few minutes of kneading for the dough to come together.
Form a ball with the dough, should be slightly sticky

Place the dough ball in a large bowl coated with vegetable oil.
Cover with wax paper and clean cloth. Place in a warm place for 1 -1/2 hours or until doubled in size.

Then remove the dough ball and place on a clean counter.
With a rolling pin roll into a rectangular shape 14″x 8″ inch
1/4″ inch thick.

*Melt 1/4 cup more of vegan butter

Spread melted butter over the dough sheet.

Sprinkle the chocolate powder over the entire dough sheet
about 1/4 cup or less.

*Leave 1/2″ of space from the edge to prevent spilling over when baking.

Tightly roll the dough into a log shape.

Cut 1″ inch pieces

Grease your baking dish with left over melted butter

Place the wheels in your greased baking dish.
Cover and place in a warm place for 30 minutes.

Pre-heat oven to 350 degrees

After the 30 minutes the chocolate wheels should have expanded in size.
Place them in the oven and bake for approximately 17-25 minutes or until slightly golden brown.

I removed mine at the *17 minute mark to ensure my chocolate cinnamon rolls didn’t harden.
They were perfectly soft and spongey.

Drizzle glaze over them, serve right away, they have the best texture when they are warm.
