A lot of you have been asking what I eat since turning Vegan.
I wanted to demo just a few of my favorite meals for you!

Recipes list:

Salad
– your favorite lettuce
– 1/2 head raddicio
– 1/2 yellow or red bell pepper
– 3 radish
– spoonful of capers (optional)
– 2 spoonfuls of kalamata olives (optional)
– handful of grape tomatoes (optional)

Dressing
– 1/4 cup olive oil
– 1/4 cup fresh lemon juice
– 1 tablespoon apple cider vinegar
– 1 teaspoon of each (Italian seasoning, garlic salt, pepper, salt)

Lentil Burger
– 3/4 cup green lentils
– 2-3 cups vegetable broth
– 2 tablespoons grapeseed oil
– 1 cup breadcrumb (i used brown rice breadcrumb)
– 1 teaspoon pepper
– 1 teaspoon garlic salt
– 1 teaspoon ground cumin
– 2 cloves garlic
– 1/2 lemon
– 1/2 yellow onion
– 1 corn
– 3 carrots
– 1/2 green bell pepper
– 1 cup vegetable broth
– vegan bread (optional)
– 2 pieces of Boston lettuce (optional)
– 1 avacado
– 1 roma tomato
– ground organic mustard

Tomato Pasta
– 16 oz pasta (tagliatelle pasta)
– 28 oz can organic fire roasted tomatoes
– 3 teaspoons sugar
– salt to taste
– 2 table spoons olive oil
– 1 cup raw cashews unsalted non-roasted
– 1 shallot
– 3 cloves garlic
– grape tomatoes ( 2 cartons full)
