FULL RECIPES~

Peppermint bark-

1 cup vegan chocolate melted
1 cup coconut butter melted
1-2 tsp peppermint EXTRACT
optional-maple syrup, beet root powder, or crushed candy canes (for decoration)

On a line baking sheet pour the melted chocolate on and smooth into a layer. Set in the fridge for 10 minutes. While the chocolate is hardening, combine the melted coconut butter with the peppermint extract, adding more to your taste. Add in the optional maple syrup. Once hardened, pour the white mixture onto the chocolate layer and smooth till even. Add any beet root powder or candy canes on top for the fun look! Refrigerate until hardened and then break into pieces. Store in fridge or cool place.

Gingerbread Men-
1/4 cup apple sauce
1/2 cup coconut sugar
1/3 cup molasses
1 flax egg
1 tsp vanilla
3 cups spelt flour
1 tsp baking soda
1/4 tsp salt
2 1/2 tsp ground ginger
2 tsp cinnamon
1/4 tsp nutmeg

Combine all ingredients until a dough is formed. Freeze for 30 minutes while your oven is heating to 350. Then, flour your work space and rolling pin and roll out until 1/4 inch thick. Cut out the shapes of your choosing and continue this process until all dough is used. Place on a lined baking tray and bake for 10-13 minutes or until cooked through. Note-these will harden up a lot once cooled so make sure they aren’t overcooked!

Pb&J Thumbprint Cookies

1 cup almond flour
1 cup spelt flour(or all purpose wheat)
1/4 tsp baking soda
1/4-1/2 tsp salt
1/4 cup apple sauce
1/2-1 tbsp vanilla
3 rounded tbsp peanut butter (creamy, natural)
1/3 cup coconut sugar
jam of choosing

Preheat oven to 350. In a mixing bowl combine all ingredients and stir till a dough has formed. Roll the dough into 1 tbsp sized balls and lightly press your thumb into it making an indent. Fill the indents with 1 tsp of jelly and place on a lined baking tray. Bake for 20-25 minutes or until golden.
