Vegan! Gingerbread Cookies

Ingredients:
– 3 cups plain flour
– 2 tsp baking powder
– 3/4 tsp baking soda
– 1/4 tsp salt
– 2 tsbp ground ginger
– 2 tsp ground cinnamon
– 1 tsp ground nutmeg
– 1/2 tsp ground cloves
– 1/2 cup vegan butter (Earth Balance)
– 1/2 cup molasses
– 3/4 cup brown sugar
– 1 tbsp corn starch
– 6 – 9 tbsp water (add as you go!)

– Mix all ingredients! When you get to the water, add as you mix it all together with your hands until you reach the right texture.
– Wrap and let cool in the fridge for two hours. Preheat the oven to 375 F or 180 C !
– Roll out your dough! (Not too thin, thicker is better)
– Cut out shapes
– Bake for 8 to 10 minutes. Cookies will still be soft when you take them out of the oven, but they will harden as they cool 🙂
