Recipe Mentioned in this Video:
I love this blog and she has some great recipes! I don’t think I would make this recipe again though unless I added the extra soy milk and maybe a touch more sweetness. It was really fun to make though and I enjoyed these cookies with my afternoon coffee and also with some vegan ice cream on a movie night! Excited to try some other very gingerbread cookies recipes next. Leave you recommendations below 😊

Christmasy Gingerbread Oatmeal Recipe
Serves 2

1 cup old fashioned oats
2/3 cup soy milk unsweetened
1 cup water
1/2 tsp ground cinnamon
1/4 tsp ground ginger
a good pinch of each: allspice, ground cloves, and kosher salt
1 tsp molasses
1 tbsp chia seeds
1 tbsp maple syrup

dried cranberries
soy milk

Combine the soy milk and water in a saucepan and bring to soft boil. Reduce the heat to medium and stir in the oats and spices. Stir and reduce heat to medium low (4 out 10) and place a lid ajar on top. Cook for 5-6 minutes, stirring occasionally.

Turn off the heat and add the molasses, chia seeds, and maple syrup. Mix well and taste to see if you’d like to add another splash or two of soy milk or more spices/sweetness. Once perfect, divide into two bowls and top with crunchy toasted walnuts, tart and chewy cranberries, and a splash of cold soy milk for a fun “milk and cookies” effect.

One of my favorite christmas "cookies" is more like a candy! Toasted shredded coconut mixed with melted dark chocolate, then put it on parchment in little spoonfuls to set 🙂

Mike Bowes says:

Why don’t you try some Hercules candy, some items are accidentally vegan and a number of items are vegan, and do a review?
A funny family a great family many of whom are vegans 🙂

Yessss girl I get so excited when you post videos! They’re always amazing, no matter the topic. I love how intelligent and thoughtful and genuine you are. You put so much thought into your content, and it really shows! Truly adore how you push for realism instead of the “perfect influencer” persona. Ok, I’ll stop fangirling out over here. 🥰 Thanks for all you do in inspiring a realistic, wholesome lifestyle.

Thanks for the iron tip with the molasses. I'm pretty anemic and struggle to build my iron levels.

Your cookies are decorated so nice-great job! I must try that Shakshuka sauce. My fav cookie is a snowball, at least that's what I call them. They are like a round shortbread cookie covered in powdered sugar.😁🎄💞
