Full Recipe:
1/4 cup Just Egg
1/2 cup of the following combined: chopped mushrooms, tomatoes, bell pepper and spinach
1/4 teaspoon of the following: chipotle powder, smoked paprika, sea salt and black pepper
1 teaspoon olive oil
1/2 teaspoon vegan butter
2 slices of bread (check ingredients to make sure its vegan)
1 teaspoon vegan Parmesan

Directions:
coat pan with olive oil
heat on medium high
saute veggies except spinach
add just egg
add seasoning
add chopped spinach
scramble
toast bread in toaster or on a panini press as shown (medium high heat)
butter with vegan butter
add vegan egg scramble
add vegan Parmesan
melt vegan cheese for about 3 mins
cut and enjoy !

This is really tasty! My preteen son also loves it! I don’t think you need to spend money on black salt for the vegan eggs. It taste great just like this.
