VEGAN BANANA BREAD RECIPE! Oil free, (can be made gluten free), and super simple to make!

R E C I P E :
3 medium ripe bananas + one for ontop (or 4 small) 1.5 cups mashed
1/2 tsp vanilla
1 flax (or chia) egg ( 1tbsp flax meal/chia seeds + 2.5 tbsp water)
1/4 cup organic cane sugar
1/4 cup packed brown sugar
3.5 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp salt
3/4 cup of plant milk
1 1/4 cup almond meal
1 1/4 cup rolled oats (use certified gluten free oats to make recipe GF)
1 1/4 cup wholemeal flour (or gluten free flour to make recipe GF)
Handful of vegan dark chocolate chunks
Handful of chopped walnuts
Make flax/chia egg & set aside to activate
Mash bananas in large mixing bowl. Then add ingredients from vanilla through until the plant milk and MIX.
Add in the almond meal, oats, and flour and MIX
Fold in extras (walnuts & chocolate)
Put the batter into a loaf tin and bake at 175C or 350F for 45mins- 1hr. or until it passes the toothpick test!
Let banana bread cool completely before cutting and serving!
**TIP: if the top of the bread is getting too brown while the inside needs to cook more, cover the bread with aluminum foil and bake until done!
