CHEESY POTATO SAUCE
You will need…..
3 yellow potatoes, chopped
4 -6 medium sized carrots, chopped
1/2 cup nutritional yeast
2 tbsp. onion powder
2 tbsp. garlic powder
1 tbsp. chili powder (optional)
1 tbsp. ACV
*adjust the spices to your preferences!

directions:
Place carrots and potatoes in Instant Pot and cook for about 20 minutes on normal pressure with 2 cups of water added. When done, check with a fork to make sure they are nice and tender.
*can also do this on the stove!*

Retain some of the water from the pot, and place all ingredients in a food processor. blend until smooth. Add the water little by little as you go until desired consistency is reached. Taste as you go and adjust spices accordingly.

Stupid-Easy Broccoli casserole
You will need…
1 bag of frozen broccoli florets (thawed and finely diced with a food processor/blender)
1 cup brown rice, cooked
bread crumbs (optional)
5-7 mushrooms, chopped
cheesy potato sauce

Directions
Preheat oven to 375 degrees
Combine everything in a casserole dish and mix well, until desired level of creamy is reached (LOL)
top with bread crumbs and bake for 20-30 minutes..
