Hi there. The recipe was great. I substituted with vegetables I had ( using Mushrooms, onion, garlic, red pepper, shrimp, and paprika). I did not have any saffron. I followed your cooking instructions using an 11” cast iron skillet and it turned out amazing. Thanks

Hola Alberto, he visto muchos vídeos sobre cómo hacer una paella vegana o vegetariana. Me gusta mucho la sencillez de la tuya y me inspira a hacer una mañana, para el día del Padre (aquí en USA), para mi.
Lo único que le agregaré es algo de NO-pollo que tengo por allí, pero como lo decís: a hacerlo con lo que tenemos en la alacena, y además ir y comprar un buen vino tinto español para acompañarlo.
