Packed with protein, calcium and amino acids this is a breakfast sandwich you gotta add to your vegan repertoire!

INGREDIENTS

For the patty:

1/2 14oz block firm tofu

2 tbs egg replacement powder (I used the brand Ener-G, but there are many brands of egg replacer for baking. If you can’t find one, tapioca starch works as well but will make it a little denser.)

3 tbs nutritional yeast

1 tbs lemon juice

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp turmeric

1/4 tsp mustard powder 

1/4 cup of water

salt and pepper to taste

Oil spray

For the sandwich:

spelt english muffin

green leafy kale

tomato

vegan cheese
