Sweet Potato Coconut Curry: Vegan Protein Beginner Dinner

We love ethnic cuisine, and whether you’re plant-based or not, there are tons of Indian and Thai dishes that are traditionally made without the use of any animal products! One of our favorite local Thai fusion restaurants makes an amazing yellow coconut curry dish that we’ve used as inspiration for this recipe. We added red lentils to boost the protein and iron content, making it a super filling meal for adults and a highly nourishing option for baby led weaning. The coconut milk and sweet potato combo really brings this recipe to life and gives it a boost of flavor and richness. This meal goes great on top of brown rice with an added squeeze of lemon or lime and a sprig of fresh cilantro, and it keeps well in the freezer. Whenever we make a big hearty meal like this, I like to scoop out about a 1/2 cup to automatically pop in the freezer, so I can have quick meals to provide for Max when I’m short on time!
