Nesco has mesh screens that you could use instead of the parchment paper. It looks like your center hole may be bigger than the hole in Nesco dehydrators but the center holes in screens can be cut larger to fit.

Looks good. We have gluten allergy including being cross reactive to oats so I plan to try them after I figure out a sub for the oat flour.

Speaking as a meat eater, I would totally eat those. I LOVE ginger and I love that the spiciness of raw ginger isn't lost in the recipe. Gonna have to try this. So the finished product is a chewy texture? I love chewy bars. I bet I would love these.

FYI: Oats, sugar, molasses, and maple syrup are all heated much higher than 120°F. So these cookies are not a raw food, although I'm sure they're yummy!

These cookies look really 😋. I’m gonna have to invest in a good dehydrator soon. I wonder if you could make a similar type of dough but with poppy sesame and caraway seeds and some spices and make savory crackers, sort of like Sociables? I think it might work😊👍😋

Ginger is very good for nausea. That is why ginger ale is good for someone who has been having nausea/vomiting!

Steel cut oats made into oat flour is best, not "quick". Other than that…I love this recipe so thanks for sharing! In addition, Ginger is a wonderfully digestive and anti-nausea herb/root. So ladies if you are expecting, check with your doc but I ate one upon waking every morning of that pregnancy nausea…it worked perfectly!
