I loved this and so did my kids! I used this as a refrigerator clean-out (like you mentioned) and used potatoes and carrots instead of squash and bell pepper. Then I tweaked it just a bit by sauteing some ginger with the onion and garlic as well as sauteing the spices for a minute. Also, since I love my broccoli tender-crisp I added that in just a couple of minutes before the potatoes were tender. This was such a good recipe and I see myself adding this into my regular rotation of favorites!

I love curries, soups, stews so much because it’s flavor and nutrition all in one dish/pot. Also using just about any vegetable is always good in these types of dishes plus they freeze well, meal prep, etc.. Thank you so much for this recipe Alyssa! Much love. ❤️ 👍 also I love green beans so I’d put that in there as well. Actually what would be good in a dish like this pineapple would be so good.
