↠ Nikki’s Vegan Lentil Curry Recipe
1 yellow onion
3 cloves garlic
1.5 tbsp curry powder
1/2 tsp cumin, coriander, and ground ginger
1 tsp salt
1/4 tsp turmeric
red pepper flakes and black pepper to taste
1 can diced tomatoes
1.5 cans water
1 cup coconut milk
2.5 cups red lentils (red preferred)
2 tbsp cilantro plus more for garnishing
Sauté chopped onion and garlic for 3-4 minutes. Add spices and cook for 2-3 minutes.
Add tomatoes, water, coconut milk, and lentils. Bring to a boil, then reduce heat to low and cover. Simmer for 20-30 minutes or until the lentils are very soft and nicely thickened.
Stir in cilantro and taste for seasoning adjustments. You may want to add more salt or curry powder if desired. I usually don’t though 🙂
Serve warm with rice or potatoes and lots of fresh cilantro on top.
↠ Leftovers Ideas:
Reheat with a touch of water and stir in some fresh spinach, frozen peas, and a handful of frozen cauliflower. Cover and simmer until warmed through (5 minutes)
Bake a large potato or sweet potato then cut in half and fill with the lentil curry. Top with a dollop of plain unsweetened vegan yogurt, or sour cream, and lots of fresh cilantro.
Blend leftover curry with cooked sweet potatoes, some unsweetened almond milk, and a touch of veggie broth. Blend until smooth and reheat on the stove. Top with a drizzle of coconut milk or coconut yogurt and fresh cilantro 🙂
Warm up a tortilla and leftover curry separately. Spread a thin layer of curry onto the tortilla and add lettuce, tomatoes, banana peppers, shredded carrots, sprouts, and avocado, hummus. Wrap up and enjoy.
