Kale Andouille Butternut Pasta Recipe:

1 tbsp olive oil
1 cup onion, diced
2 cloves garlic, minced
2 links of andouille sausage, sliced
2 cups kale
1/2 cup tomatoes, diced
1 cup marinara sauce
3 cups butternut squash soup
2 cups dried pasta
salt and pepper to taste

In a large pot on medium high heat, add olive oil and onions. Cook for 2 minutes until translucent. Add garlic and stir. Cook for 1 minute until fragrant. Add andouille sausage – cook for 2 minutes then add kale, diced tomatoes and stir again. Pour in dried pasta, marinara sauce, and butternut squash soup. Stir to mix. Cover pot and simmer for 12 minutes or until pasta is al dente. Remove lid, add salt and pepper as needed, stir again. Serve and enjoy!

Vegan Pasta Primavera Recipe:

2 tbsp olive oil
1 cup onion, diced
2 cloves garlic, minced
1 1/2 cups eggplant, diced
1/2 cup mushrooms, sliced
1/2 tsp kosher salt
1 zucchini, diced
1 cup asparagus, sliced into 1 inch pieces
1 cup broccoli florets
1 tbsp chopped parsley
2 tbsp chopped basil
2 cups fusili pasta
3 cups marinara
1 cup water

In a large pot on medium high heat, add olive oil and onion. Cook for 2 minutes until translucent. Add garlic and stir for 1 minute. Add eggplant and mushrooms and saute for 3 minutes until cooked through. Season with salt and pepper.

Add zucchini, asparagus, broccoli, parsley, and basil. Mix well. Pour dried pasta, 3 cups marinara sauce, 1 cup water and mix again. Cook for 12 minutes until pasta is al dente. Halfway through stir the pasta to make sure it’s not sticking to the bottom. Serve hot and enjoy!
