Thanks to all the vegans out there for helping me eat more plant based last year! I’m continuing into 2017 eating mostly plant based, but I’m not committed to any labels or strict diets.

HUGE shoutout to HotForFood (http://www.youtube.com/user/hotforfoodblog) for inspiring me to try an original recipe with ingredients I have in my pantry! That was a first, and it was so wildly successful, we didn’t have ANY leftovers and Steve said it was the best thing I’ve ever made on Tasty Tuesday besides the tamales from 2015! Whoa. Was not expecting that in the slightest. Here’s the recipe if you want it:

NIKKI’S JACKFRUIT ENCHILADAS:
1 can enchilada sauce
3 cloves garlic, minced
1 small onion, chopped
2 tablespoons green chiles (from a can)
8 oz. mushrooms, sliced
1 red bell pepper, diced
1 pkg tex mex jackfruit (or jackfruit from a can that you spice)
1 can black beans, drained and rinsed
1 can white corn, drained
1/2 tsp black ground pepper
1 tsp ground chipotle pepper
1 tsp ground cumin
Corn tortillas (about 8-10)
2 pkgs Daiya Pepper Jack cheese (or regular cheese if you eat dairy)
optional toppings: diced tomato, sliced black olives, avocado
-preheat 350 degrees
-sautee garlic and onion in 2 tbsp oil, until onions are translucent (about 3 min)
-add mushrooms, bell pepper, 2 tbsp green chiles, corn and cook 5 min, stirring
-add jackfruit and spices, sauté for 5 min until flavors soak in
-grease 9X13 pan, ladle some enchilada sauce on bottom
-warm tortillas in microwave, dip tortilla in enchilada sauce, fill with filling and beans and sprinkle cheese
-roll and put in pan, repeating until pan is full
-Ladle enchilada sauce on top (enough to cover), and sprinkle remaining cheese until covered
-cook for 20 minutes
-add diced tomatoes/olives/guacamole

Linda Rosenthal says:

I went plant based about a year ago and I don’t like the vegan label because I am not vegan on all aspects of life. I am enjoying your videos with plant based food!

2019 here😂

Usuany Monreal says:

Might have some issues with my BF because I'm ignoring him a bit for you 😅 it'll benefit him in the end so he'll be fine

Wow took me forever to see how I can comment…
I am on a binge watch thing of ALL your videos… Not proud and a little sad because I have like 4 ingredients at the moment but I will make most of the dishes I hope…..

Faith Po says:

Awesome Nikki I agree labels divide people! You are awesome but setting a better example.

Ayan Ali says:

I expected some mean comments, some trolls etc. but its all love!!

Gaby Morales says:

Uhhh why do your enchiladas have olives?

Ceci Me Seed says:

Nikki! I totally agree with you not putting labels on everything. I went vegan for two months and it was great but I prefer to say plant based because it makes more sense. I'm not vegan, I eat salmon sometimes but most of my diet is plant based. And going vegan puts restrictions on you so that's why I say that I mostly eat plant based meals. You're awesome! Xoxo

La Ra says:

I've watched you for awhile, just saw this one, saw you're info on "mostly plant based", ,,, which is what I am,, no labels… good job
