Hey guys, this is a quick chickpea and lentil curry recipe, very quick and easy to make and if you are into meal prepping you can totally add this to one of your meals, high source of protein and very low in fat. All the ingredients used are listed below


1 Can of Tin Tomato
1 White onion
1 Red bell pepper
1 Vegetable stock cube
1tsp Garlic powder
1 tbs Curry powder
A pinch of white ground pepper
1 tbs Tomato puree
1 tbs Rose Harissa Spice Paste (I bought it from sainsbury’s)
1 Cup of Chickpeas
1 Cup of Cannellini Beans
1 1/2 of Lentils
2 1/2 cups of water for cooking

Directions : Add tin tomato to a hot pan, cook until dry, add onions and peppers, add the vegetable stock cube, garlic powder, curry powder, rose harissa spice paste, tomato puree and white ground pepper. Add your lentils and water and cook on a medium heat for 15-20 mins. Once lentils have softened add your chickpeas and cannellini beans and cook on a very low heat for another 10 mins. it is so simple to make 🙂
