High Protein Breakfast Wraps (VEGAN)

Hang out and enjoy the morning with me while we head out on my bike to get some ingredients and make these amazing, high protein breakfast wraps. Let me know your thoughts in the comments down below and don’t forget to tag me if you make these!

Recipe:
Soft/medium tofu (1/2 block)
1/4 red onion, diced
1/2 of green & red bell pepper, chopped
chopped mushrooms
2 Tortillas/wraps

Tofu spice mix
1/2 tsp of each:
Sage, garlic powder, cumin, smoked paprika, rosemary, salt
2-3 heaping tablespoons of nutritional yeast

Toppings:
Salsa
Sliced avocado
Chopped lettuce

Directions:
1. Sauté vegetables until soft
2. Crumble tofu into a bowl and mix with spice mix
3. Add tofu mix to sautéed veggies and heat for 5 mins or until hot.
4. Add to tortillas and add toppings. EAT!

I cannot explain why it's taken me 3+ years on this plant based plan to try a tofu scrambled. I just never thought it would compare to scrambled eggs, which I really enjoyed – I was so wrong. It was all in the seasoning and soft texture tofu that you suggested. I added previous oven roasted, diced potatoes to my scramble and a side salad. Thanks again Derek for your inspiration and so much more.

How do you get the tofu not to stick to the bottom of the pain without oil? It ALWAYS gets tuck without oil 🙁
