Healthy Vegan Ginger Spice Cookies

1 teaspoon ground cinnamon
1/2 teaspoon ground clove
1/2 teaspoon baking powder
1/4 teaspoon baking soda

½ cup coconut oil, room temperature
1/3 cup coconut sugar
1/3 cup regular molasses
2 tablespoons hot water

Salt and Pepper Topping

2 teaspoons ground pink peppercorns
Large crystal maldon salt

Please, use a scale and weigh your ingredients in the future. Include standard volumetric measurements in case people don't want to use one themselves, but not only is measuring out ingredients by weight faster, it's also more accurate. A cup of flour can vary by 20%, but a pound of flour will always be a pound of flour.
