Today I am showing you some healthy vegan dinner ideas that are perfect for spring or summer. These recipes are super fresh and light, but packed with nutrients and delicious ingredients. Recipes below as always 🙂

Avocado Corn Salsa:
1 cup corn
1 medium tomato, diced
1/2 avocado, diced
1/4 cup red onion, finely chopped
1 tbsp liquid sweetener such as maple syrup, agave
1 tbsp lime juice
hot sauce to taste

2 portobello mushrooms cooked with soy sauce and pepper
handful of kale, washed and chopped
tortillas or taco shells
avocado corn salsa (recipe above)

Lentil Sloppy Joes
2 cups cooked lentils
1/2 white onion, chopped
2 cups tomato sauce
1 tsp vinegar
1 tbsp lime juice
1/4 tsp pepper
1/2 tsp chilli powder
1 tsp smoked paprika
2 tbsp coconut sugar

Simple Coleslaw:
1 cup shredded lettuce and carrot
1 tbsp vegan mayo

Lemon Tahini Bowl:
raw veggies
sesame seeds
green onion

Lemon Tahini Sauce:
2-3 tbsp tahini
1 tbsp lemon juice
1 tbsp sugar or maple syrup
1 tbsp soy sauce
water if needed to thin it out

Hey Olivia, I am literally addicted to your vids. Have been binge watching all of them and loving everything.
Really wanted to know if the tahini you mentioned in the lemon tahini bowl was just sesame seeds or a mix of garlic, lemon juice, chilli and sesame seeds? It’d mean a lot to me if you replied cuz I really want to make the bowl.

Your recipies are always so good. I make them 5-6 times a week easily. I’ve had this one saved for awhile and going to make the sloppy joes for dinner tonight! I’ve never had a disappointing recipe yet. My favourite is the loaded baked potato soup. Mmmm that’s become a staple in our house. Switching out the potato for broccoli or cauliflower is also amazing!!

I finally made the Lemon Tahini Bowl and it was just freaking amazing. That sauce…..!!! 🖒🖒The tacos are very good as well, especially the salsa. Its so good alone with some tortilla chips. Haven't attempted the burger yet, but its coming.
