Hi there and welcome back to a new video featuring more easy and tasty vegan breakfast ideas!
All these foods are to be prepared ahead of time so you can have them on the go the next morning. We’ve got healthier breakfast brownies, vegan feta style cream cheese sandwiches, peanut butter breakfast cookies and more in this one 🙂

#1 Peanut Butter Breakfast Cookies

1 cup + 1 tbsp small cut oats (100g)
½ cup ground almonds (50g)
⅓ tsp salt
½ tsp cinnamon
½ tsp baking powder
2 tbsp sunflower seeds
1 tbsp semi ground flax seeds
½ cup peanut butter (125g)
1 ½ tbsp melted coconut oil
3 ½ tbsp liquid sweetener (rice, agave, maple, date syrup)
1 tsp vanilla

extra add ins: a handful of apple chunks, pumpkin seeds, chocolate chips etc
*yields 10 – 12 small ish cookies

#2 Roasted Tomato & Bean Toasts with Cucumber Salad

tomato bean dip:

3 tomatoes, cut into eighths
1 small onion, cut into rings
1 tbsp oil
pinch of salt
2 ½ tbsp sunflower seeds

½ can kidney beans (120g)
1 tsp tahini
1 tbsp soy sauce
½ tsp mustard
1 tbsp tomato purée
juice of ½ lemon, more to taste if needed
1 tbsp balsamic vinegar
salt & spices of choice to taste

→ this sauce tastes also really nice if you warm it up in a saucepan for a few minutes
→ lasts sealed in the fridge for up to 3 days

cucumber salad:

1 cucumber
½ small red onion

1 tbsp unsweetened soy yogurt
1 tbsp soy cream (or add another tbsp soy yogurt)
1 tbsp white wine vinegar
1 tbsp soy sauce
spices of choice
extra salt if needed

→ lasts in the fridge for 2 days
→ serves 2-3

#3 Vegan ‘Feta’ Style Cream Cheese Sandwiches

juice 1 lemon
1 block firm tofu (200g)
1 tbsp olive oil
2 tbsp pickle juice
1 ½ tbsp white wine vinegar
1 tsp salt
½ tsp onion powder
2 tbsp coconut oil, solid

toast, avocado, lettuce etc

#4 Chocolate-y Baked Oatmeal

8-10 dates (~80g or 2.8oz)
250g oats (3 cups – 1 tablespoon)*
1 tsp salt
2 tbsp ground flax seeds
3 1/2 tbsp ground almonds
⅓ cup unsweetened cocoa powder (40g)
½ tsp baking powder
5 ½ tbsp apple sauce
½ tsp vanilla
3 ½ tbsp vegetable oil
3 tbsp agave syrup
1 cup non dairy milk (250ml)

a handful of walnuts, chopped
a handful of vegan chocolate chunks

*I used about 180g small cut oats and 70g rolled oats
**use something like a 9×9 inch baking pan

For the feta cheese I haven't made any vegan options myself, but I come from a Mediterranean family, so I used to eat feta cheese a lot. If you want it to resemble feta cheese, I think you must use yogurt bacteria for it to give it the "cheese development flavor" at least a bit. Those bacterias are in some soy yogurts so you can add a tbsp or sth like that. You should also add a lot of oil to it! Feta is greesy, even if you don't taste it that way but good feta cheese has 40-60% fat to it. After firming up, you need to put it into a salt solution and let it develop its flavor. It was done for preserving, because it's hot down there and there were no refrigerators. I hope I could help you 🙂

Hello. For the cheese to make it firm maybe you can add some psyllium husk or xanthan?

I think draining the tofu would be the best idea since there’s so much water in the tofu and the consistency of the cheeze was basically cream cheeze because of the water content so yeah.. just an idea XD

Nur mal so aus Interesse.. ich hab gelesen, dass Sojaprodukte die Eisenaufnahme hemmen.. und du verwendest ja sehr oft Sojaprodukte.. Ich persönlich versuche immer Sojaprodukte aus oben genanntem Grund zu vermeiden^^ Ist das jetzt unnötig oder achtest du gar nicht aus sowas?^^
