Its getting cold outside so shout out to the fall recipes in full effect! this broccoli and cheese casserole is good for the whole family to enjoy.
Here is the recipe:
One head of broccoli washed and cut into florets( you can use frozen of course)
Salt ans steam(I used one cup of water) on medium/low for ten min then let fully cook on residual heat for another 5-10 mins
drain broccoli and cook rice. I used 1/2 cup dry
*Preheat oven now to 375
For the Sauce:
1 and 1/4 cup chopped onion
1 tbsp chopped garlic
sweat out in about 3 tbsp oil with salt and pepper
add 4 tbsp flour
then 2 cups of milk
add one bag vegan cheddar cheese
*Turn off heat
mix everything and season with 1/2 teaspoon paprika, onion,garlic
Taste and add more seasoning if needed.
combine all ingredients in casserole dish
For the Toppings:
1/2 cup panic bread crumbs
2 tablespoons nutritional yeast
1/2 teaspoon garlic, paprika, onion,italian seasonings, and salt
Combine and Sprinkle over casserole, bake for 10-15 minutes.
