1 chopped yellow onion
1 chopped red bell pepper
6 tablespoons minced fresh garlic
1 chopped carrot
2 15 ounce cans of artichoke hearts in water
2 15-ounce cans no-salt-added diced tomatoes in juice
1 chopped yellow squash
1 chopped bundle of asparagus
1 cup fresh or frozen peas
1/2 cup diced fresh parsley
2 cups cooked brown rice
1 1/2 cups low-sodium vegetable broth
10 saffron threads
1/2 teaspoon Spanish paprika
1 teaspoon black pepper
1 teaspoon red pepper flakes (optional)
Gently spray nonstick cooking spray into heated pan over medium heat.
Add onion, peppers, carrots and garlic. Cook just until lightly browned, about 3-5 minutes.
Add artichoke hearts and tomatoes.
Stir in brown rice, yellow squash, peas, asparagus and vegetable broth.
Lower heat to medium-low and add saffron, paprika, pepper and crushed red pepper.
Cook another 30 minutes.
Garnish with freshly chopped parsley.
