Coconut curry chickpea soup

I hope you love this great estrogen fighting soup!
1 onion
1/2 butternut squash
1 head cauliflower
3 cloves garlic 1 tsp zested ginger
1 tsp olive oil… Pan fry to soften veggies.

1 can coconut milk
1 Tbls. Peanut butter ( no sugar added .. No skippy !)
2 tsp curry powder
Meld together on cook top
Add this mixture to 32 oz of veggie broth or organic chick stock in crockpot , add veggies and 2 cans chickpeas.

Top with cilantro… Enjoy!

Note: I will be adding kale into my soup as well. Feel free to top with fresh lime. Be creative !
