Chickpeas or garbanzo beans are probably my favorite legume to use as an ingredient in so many different applications. This chickpea salad vegetarian recipe is so easy to make in just minutes, and you dont even need to cook to make it lol. Chickpeas are a great source of vegan protein perfect for those looking to increase their protein intake while eating vegan recipes.

Ingredients:
1/2 teaspoon of pepper
1/2 teaspoon of red pepper flakes
2 tomatoes diced = about 1 cup
1/4 cup of fresh Cilantro
1/2 lime
1/2 cup diced red onion
1 cup of diced cucumber
2 16 ounce cans of chickpeas
salt to taste
