Chickpea flour has long been my favorite vegan egg substitute. It’s perfect for baking, for battering and breading fried foods, for making vegan omelets, and now, it’s the perfect protein-packed egg-quivelant for your one-the-go breakfast. The recipe featured in this video is a knockoff of a classic bodega-style breakfast sandwich, served on a burger bun with gooey melted cheese and your breakfast meat of choice.

You know what? I have an ENTIRE bag of garbanzo bean flour I bought a year or two ago for a recipe I got home and… couldn't find… It expires late this year so I'm happy to have a reason to use it! (and this package of O'Dough's thins "original vegan sandwich" bread I bought because they looked amazing and never found anything to do with them. Suggestions welcome!).

However, despite the amount of black "egg" salt I used to try and make it taste more eggy… it didn't taste like egg at all! lol It just tasted like flour, which made me feel weird because now I'm just eating flour on bread lol.

Still, this gave me my first proper breakfast in months and, with avocado, trader joe's garlic aioli mustard sauce and salsa (Sorry, I didn't have faux meat or I don't think I would have wanted all that) this still made me happy. 😋 In fact, I just found your page and I've already watched 3 videos before stopping to actually make something; I've never subscribed to a channel so fast lol.
