In Today’s video I’m making my gluten-free 90 second quinoa flakes for breakfast, then a healthy salad with an oil-free homemade salad dressing, and sharing the recipe for my healthy vegan enchiladas with homemade vegan nacho cheese! Hope you enjoy!

RECIPES

90 Second Quinoa Flakes

2 cups boiling water
2/3 cups quinoa flakes (I used a brand called Ancient Harvest)
2 tsp of cinnamon
pinch of salt

stir quinoa flakes into boiling water. Reduce heat to low, add cinnamon, and salt, and stir. I also really love adding mashed banana and/or some diced apples or pears to sweeten it up.

Top with fresh fruit and nuts or the Nutzo Power Crunch Almond Butter an a drizzle of apple syrup if you like!

Grocery List:
Ancient Harvest Quinoa Flakes
NutZo Power Crunch

Vegan Enchiladas

1/2 diced onion
2-3 cloves diced garlic
1 tomato chopped
10-15 mushrooms, chopped
1 cup black beans
1 cup corn (I used frozen)
2-3 cups prepared brown rice
1/2 package of enchilada sauce (about 3/4 cup)

Sautee veggies with a plash of water until slightly softened. Add in beans, corn, and rice, then finish with sauce. Stir to combine and set aside.

Preheat oven to 375 and add remaining sauce packet to the bottom of a baking dish.

Warm corn tortillas so they’re easier to roll and add vegan nacho cheese sauce (recipe below) and the rice mixture. Roll and place in baking dish.

Cover with more sauce (from the second package) and sprinkle with vegan cheese if desired. Bake for 10 minutes.

Let rest for 5 minutes before serving so they stay together and serve with salad or steam veggies and fresh avocado.

Vegan Nacho Cheese Sauce

1/2 cup cashew butter
1/4 hot water
1 tbsp of the juice from a jar of jalapeños
1 tbsp paprika
1 tbsp chile powder
1/4 tsp cayenne pepper
salt and pepper to taste

Hi Nikki, I just subscribed to your channel! I love anything vegan and your recipes are delicious! Really like your videos. WOW! I really appreciate you making those recipes & sharing them. I've a question about Thrive market, well maybe 2 &/or a comment /concern. I think like most sites no matter how much of a deal the shopper gets, the shipping is what makes things expensive b/c you have to buy a minimum to get free shipping when maybe you only really need or want or xan afford half of that amount sometimes. What can you tell me about the shipping costs? One thing I do not like about online shopping re: food is I live in Southeast Texas. Very hot here most of the year. I get concerned about certain products going through extreme temperatures by the time they get to me. In the past, from other sites, for example I've gotten things that were ruined b/c they had gone from extreme freezing cold weather too hot weather & they were not usable by the time I got them. Lije tge cashew butter. What are your thoughts on this? I'm a new vegan who has never bought vegan food online. Thx Nikki!
