I can’t believe I’ve made a cooking video considering I can’t cook to save my life ahaha BUT it has been so highly requested for so long that I thought I’d give it a go! Here are four of my favourite easy vegan recipes that are not only yummy, but also pretty healthy. Again, I’m not vegan, just vegetarian, but I try to eat vegan as often as possible. Let me know what you guys think!! xxx

RECIPES!
Veggie Pasta
– 1 cup of pasta of any kind
– 1/2 an avocado, diced
– 1 whole cube of ‘bc’ Persian Macadamia Feta
– Bunch of cherry/grape tomatoes, diced
– Bunch of asparagus, steamed and chopped
– Bunch of broccolini, steamed and chopped
– Basil leaves, diced
– Handful of rocket/arugula
– Drizzle of balsamic glaze

Avocado Toast
– 1/2 an avocado, sliced
– 2 slices of sourdough bread, toasted
– 1/2 cube of ‘bc’ Persian Macadamia Feta
– Small handful cherry/grape tomatoes, sliced
– Handful of rocket/arugula
– Drizzle of balsamic glaze

Chick’n Salad
– 1 Quorn Vegan Schnitzel, cooked and chopped
– Bowl full of mixed salad leaves
– Handful of cherry/grape tomatoes, diced
– Carrot, sliced
– 1/2 Lebanese cucumber, diced
– 1/2 capscium/red pepper(?), diced
– Sprinkle of nutritional yeast
– Dollops of Roasted Garlic Vegenaise

Smoothie
– 1 cup soy/almond/coconut/etc milk
– 1 scoop of WelleCo Nourishing Protein Powder in Vanilla
– 1/4 cup rolled oats
– 1 tbsp chia seeds
– 1 tbsp psyllium husks
– 1 banana
– 1/2 cup frozen blueberries

With the Quornn “chicken” you should microwave it for about 1m and then fry it! That’s what I do with mine, makes it so much quicker when cooking them from frozen ☺️

I always wondered what rocket was and thought it was just an Australian thing…but it’s arugula?!?! I hate arugula with all my being it’s so disgusting!

I made your veggie pasta tonight! I didn't use the feta coz its a bit expensive so I just put some minced garlic in when I steamed the veggies instead. Everything else the same though and it is so yummy!! and it was done in like 10-15 minutes, definitely going to be a new regular meal for me 🙂

Lovely, delish looking recipes but seriously all you do to pasta is put it in salted boiling water lol. Fresh pasta is like 2mins tops and packet pasta like 8 mins or something. and thats it!

Psyllium husks are pure fiber and are bulking in liquid, meaning they move and clean contents of your colon. Very good for people who suffer from constipation.
Am I recollecting correctly that you were/are having an issue with your thyroid? It would be best to stay away from wheat, especially the one containing gluten. Also, soy milk is a "NO, NO" for thyroid, as it messes up your hormones. It contains plant estrogen. Try using rice or almond or any other plant milk.

Have you tried the fry's patties? I like them more than the Quorn ones and they take about 15-20mins under the grill and the breading goes crunchy! Yum! Will definitely be trying some of these dishes out! Thanks Lauren!
